Did You Know?

If you are ever left in the middle of the woods to survive would you know what plants you could eat? (Now you do!)

Wild Plants that are edible:
Burdock (very bitter)
Dogwood berries, but not the plant (the berries taste like burdock)
The inside bark of a cottonwood tree
The white inside part of a cattail (tastes good! Sort of like a really mild cucumber.)
Watercress (sold as a delicacy in restaurants, but I don't like it much, it tastes like a really spicy radish)
Poplar bark
Anise (Very good, if you like black licorice!)
Dandelions. The leaves make a great salad, and the roots can be roasted and ground into something kind of like coffee.
Any kind of mint, which is recognizable from the smell
Wild rose hips, but not the plant (the hips are high in Vitamin C and are an ingredient in many teas.)
Thistle (Scrape the thorns off, duh! Eat the leaf or the inside of the blossom.)
Quaking aspen leaves, but they aren't exactly for eating. Make a tea of them to kill minor headaches because they contain salicylic acid, the active ingredient of aspirin.
Some berries, including strawberries, raspberries, chokecherries (too much pit to be worth it), currants (TART!), serviceberries, gooseberries (green and stripy and TART!), purple elderberries (red ones are poisonous), etc. Don't eat sumac berries, they are poisonous!
Prickly pear. If you scrape off the skin and boil the inside, it tastes good!
Clover. Not sure how that tastes.

Wild plants that are poisonous:
Nightshade, recognizable by its purple and yellow flower
Dogwood
Houndstounge
The wild rose plant, not the hips
Most mushrooms. Don't eat any unless you know what you are doing.
RED elderberries. Purple ones are okay.
A whole lot of other things. If you don't know what it is, don't eat it.

A Spectacular Surprise

This past weekend Brad had business trip in Anaheim, CA, and right before he left he surprised me with a plane ticket to Anaheim to spend the day with him in Disneyland!! It was awesome! I couldn't’t stop giggling I was so excited and giddy with glee. See, I love surprises; I just love them especially big surprises!! I was not expecting this at all! It was a genuine surprise! Brad flew out to Anaheim Saturday morning to go to the job site and my flight came in that night at 9:00 pm after his job, and Sunday we played at Disneyland then caught an evening flight and we were back to start our work week. It was great. I loved every second of it and I can honestly say it was the perfect day. Brad you are amazing.

Here we are waiting/stuck on Splash Mountain because it was having "technical difficulties".

Since we got stuck on Splash Mountain they gave us this free wait-free pass:

We ate at a new BBQ place by Thunder Mountain, it is family style and delicious and the dessert came in this and it was fabulous.

Did You Know (Australian Style)

Australia hosts some strange races and sporting events.

Here's a quick rundown of a few:

1. The Cockroach World Championship - Brisbane: Every Australia Day, the Story Bridge Hotel runs a cockroach race in Brisbane.

2. The Beer Can Regatta - Darwin: Every July or August , a race involving watercraft constructed out of discarded tinnies (beer cans).

3. Cane toad racing - Magnetic Island

4. The Camel Cup - Alice Springs

5. The Henley-on-Todd Regatta - Alice Springs: September every year, a race where bottomless boats are constructed so that their sailors can run on foot.

6. Wife Carrying Championships - Singleton

7. Pig racing - Melbourne

8. The Nude Olympics - Maslin Beach: Every February with events such as tug-of-war, Frisbee-throwing and a Best Bum competition.

St. George

We spent the weekend in St. George and we had a wonderful time!

Here we took a drive in a canyon and walked around, but it was so cold, thus the scarf.

At Last!

We have wonderful news; we have finally bought a home! We apologize to friends and family for keeping it a secret, but with the disappointments we have encountered in this frustrating process we wanted to keep it to ourselves.

This home was a short sale. We gave an offer on Friday, March 27th and the contract was signed and returned on Thursday, April 2nd. We close on April 28th. We have been surely blessed, as anyone who is familiar with short sales knows that having the contract signed and returned in 5 days and closing in 26 days is nothing short of a miracle.
